The Ideal knife range from Lion Sabatier is forged from a single piece of steel with optimal weight and balance that feels comfortable in the hand.- One piece of metal from the tip of the knife to the bottom of the handle.- Hard stainless steel (X50Cr Mov15 chrome steel) with high carbon content.- Olive wood or POM-C handle.- Handle attached with 3 through brass rivets.- Easy to maintain - stays sharp for a long time.- Easy to clean, but dishwasher safe is not recommended.Rockwell hardness 57-59 HRC.
